This is a classic Nocellara Del Belice from Sicily.  The aroma is sweet, floral and herbal.  The taste is very spicy-herbaceous with a lot of grass, green apple, mint, black pepper and lasting cinnamon.  It’s really fresh, complex and well balanced.

Made with White Trebbiano Grape Must, our white peach balsamic does undergo the cooking and barrel ageing process of Balsamic Vinegar of Modena but is not caramelised therefore it retains its white colour. The result is a crisp vinegar with a touch of sweetness reminiscent of handcrafted vinegar from northern Italy. Extremely adaptable, it can be paired with any of our Extra Virgin Olive Oils, as well as flavoured oils to make a light, tart vinaigrette.

The deep, red fruit of fresh Italian plum purée gives this stone fruit vinegar a multifaceted flavour with sweet and sour aromas that have a long and rich finish. Our staff enjoys this vinegar most when used for Asian influenced cuisine or fusion inspired recipes. Red Wine Vinegar

Red Wine Vinegar can be used in salad dressing, sauces and can also be cooked in reductions to make sauces which will turn sweet with a faint tangy bite. Reduction sauce can be drizzled over vanilla ice cream and figs to create a very complex, interesting dessert.
